No Cook Camping Recipes for the Avid Camper

If you’re always on the go, it’s a better idea to have a few quick recipes ready. This way you get to save a lot of time, space, money and effort. There are several tips on how to prepare no-cook food without compromising the taste, presentation and fun. Here are some campers’ favorites that you and your family will surely enjoy.

Shrimp and Mango Salad

You will need the following: 3/4 pound cooked shrimp, 1 large mango preferably deseeded and sliced in cubes, 1/4 sliced green onions, 1 tbsp fish sauce, 1 tbsp soy sauce, 2 tbsp water, 1 large lime juiced, 1 tbsp brown sugar, 1 tsp minced jalapeno pepper, 4 cups arugula and 4 small ripe tomatoes wedged.

Place the cooked shrimp, cubed mango and sliced green onions in a mixing bowl. Mix together the fish sauce, soy sauce, lime juice, brown sugar then minced jalapeno pepper then pour over the shrimp/mango/onion bowl. Cover then refrigerate everything for 10 minutes. Distribute the arugula evenly among plates then place the shrimp and mango salad. Garnish with ripe tomatoes.

Instant Caesar

Prepare 1 canned tuna, 1 large head of torn lettuce, 1 cup croutons and 1/4 cup grated parmesan cheese. The dressing will need 1/3 cup drained yogurt, 2 tbsp lemon juice, 1 tsp white wine vinegar, 1 tsp Dijon mustard, 1 tsp anchovy paste, 1 tsp olive oil, 1 tsp Worcestershire sauce and 1 crushed clove of garlic.

Whisk the dressing contents together. Set the lettuce followed by the tuna, croutons and cheese. Pour the dressing over everything then toss for a good 30 to 60 seconds before serving.    Enjoy!
